Hobo Dinner

 

This may not look like much, but it's a quick, easy supper idea I found in the NRC churches' Iowa cookbook. It's called Individual Hobo Dinner. I had forgotten about it until Levi requested them for supper the other night. On a sheet of foil, you put a hamburger patty, some sliced potatoes (I happened to use hashbrowns,)onions (I was in a hurry so I used minced), carrots, fresh or canned mushrooms (since I had some on hand) or any other vegetable you'd like to include. I salt and pepper everything and then add a dollop of undiluted cream of mushroom soup. Wrap the foil around the whole works and bake for 40ish minutes. I make each person his/her own, smaller for the kids. You can adapt what you put in for each person's likes or dislikes. To serve you just put on your plate, open it up, devour the contents, wad up the foil, through it in the trash and you're finished! Super easy clean-up. I was told you can cook these at a campfire in hot coals too, but we aren't that hoboish yet.
